you don't necessarily die, during surgery you can poke a person's brain and it can trigger different physical reactions but so much of it is water so its got a little give.

in wars sometime people take shrapnel to the head, so they'd remove the skull and either put a metal plate there or leave it exposed until the skin grows over! fun fact!
